Carrot Ribbon Salad (Viral & Easy!)

Carrot Ribbon Salad is one of those recipes that’s simple, pretty, and surprisingly fun to eat! I first saw this viral salad making its rounds online, and I had to try it. It’s light, fresh, and gives major “I take care of my skin” energy because carrots are packed with nutrients like beta-carotene. Bonus: we all probably have a bag of carrots hanging out in the fridge that’s begging to be used.

This salad is super flexible. You can jazz it up with more toppings, or keep it simple like I did. Either way, it’s crunchy, tangy, and just the right amount of sweet.

Method

Peel the Carrots into Ribbons

Start by washing and drying your carrots. Using a sharp vegetable peeler, carefully shave each carrot into long, thin ribbons. I like to rotate the carrot as I peel to get nice, even strips on all sides. You don’t need to peel the very core of the carrot once it gets tough or too small to grip safely, you can set it aside (or snack on it!). Try not to press too hard with the peeler, or your ribbons might break or come out too thick. Aim for soft, curly pieces that will soak up the dressing and look beautiful in the bowl.

Make the Dressing

In a small mixing bowl, add the sesame oil, rice vinegar, low-sodium soy sauce (or tamari), honey, and fresh lime juice. Use a whisk or fork to mix everything together until smooth and well combined. It’s important to mix well especially the honey because it can sink to the bottom and won’t coat the carrots evenly if not fully blended.

Toss It All Together

Place your carrot ribbons into a large mixing bowl. Pour the dressing over the top and gently toss with clean hands or salad tongs. Make sure all the ribbons are evenly coated with that tangy-sweet dressing. You don’t want any dry pieces hiding at the bottom.

Finish It Off

Once the carrots are dressed, it’s time to garnish. Sprinkle chopped parsley or cilantro on top for freshness and color. Then add a teaspoon of sesame seeds for crunch and a little nutty flavor. Give it one last gentle toss, or just leave the garnish sitting pretty on top. Now it’s ready to serve!

Ingredients

  • 6 large carrots, peeled into ribbons

  • 1 tablespoon sesame oil

  • 2 tablespoons rice vinegar

  • 2 tablespoons low-sodium soy sauce or tamari

  • 2 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 2 tablespoons chopped parsley or cilantro (optional)

  • 1 teaspoon sesame seeds

Directions

  • Peel the carrots into ribbons.
Grab your peeler and shave the carrots into long, thin ribbons. I like to rotate the carrot as I peel to get even strips.
  • Make the dressing.
In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce (or tamari), honey, and lime juice.
  • Toss it all together.
Place the carrot ribbons in a large bowl. Pour the dressing over the top and toss gently to coat every ribbon.
  • Finish it off.
Sprinkle with chopped parsley or cilantro and sesame seeds before serving.

Notes

  • Don’t press too hard when peeling. If you go too hard, the ribbons can break or get too thick.
  • Avoid the core. Once you hit the tough inner part of the carrot, it’s okay to stop peeling and snack on that part separately.
  • Whisk the dressing well. You want everything blended, especially the honey which can settle at the bottom.

Serving Suggestions

This salad is super versatile! Here are a few ways I like to serve it:

  • As a side dish with grilled chicken, fish, or tofu
  • In a rice bowl with quinoa, edamame, and avocado
  • On top of a green salad for extra crunch and color
  • Tucked into a wrap with hummus or leftover protein

Fun Fact

Carrots are rich in beta-carotene, which your body turns into vitamin A. This vitamin is great for your eyes and skin so yes, this is a salad that might literally help you glow!

Conclusion

This carrot ribbon salad might be one of the easiest (and prettiest) salads you’ll ever make. It’s quick, full of flavor, and perfect for when you want something healthy that doesn’t feel boring. Whether you’re meal prepping or just looking for a new way to use up those carrots in the fridge, this is a must-try! Now go grab that peeler and have some fun your skin and your taste buds will thank you!
