Chicken Masala – Boneless, Bold & Bursting with Flavor!

You asked for another chicken curry recipe and here it is, hot and ready! Chicken Masala is a popular dish in Pakistan, usually made with bone-in chicken. But I’ve put together this boneless version that’s just as rich, flavorful, and totally comforting. It’s one of those curries that makes the whole house smell amazing, and the masala (that saucy magic!) clings perfectly to each bite of juicy chicken.

I love serving this with warm naan or fluffy rice, especially when I’m in the mood for something cozy and bold. The best part? It’s not too complicated and uses everyday pantry spices. Let’s get cooking!

Method

Build the Masala Base

Start by heating ¼ cup of corn oil in a deep non-stick pan over medium heat. Once the oil is hot, add the 400g of tinned chopped tomatoes. Stir continuously as the tomatoes cook down this is where the foundation of your curry starts to develop its deep, rich flavor. Keep cooking until most of the water from the tomatoes evaporates and the oil begins to separate. This is your cue to move to the next layer of flavor. Add in the minced garlic and grated ginger, and fry them until the aroma becomes fragrant and irresistible. Then it’s time for the spices: turmeric powder, coriander powder, cumin powder, red chilli powder, black pepper, salt, and garam masala. Stir the spices into the tomato mixture and fry for about a minute, letting the spices toast just slightly to unlock their full aroma and deepen the flavor of your masala.

Add Chicken and Simmer

Now that your masala is ready, toss in the chicken pieces (cut into 1½-inch cubes). Stir the chicken through the masala, coating every piece with that rich, spicy sauce. Let it fry for a few minutes so the meat starts to absorb the flavor. Then add in the whole or sliced green chillies and the 4 tablespoons of natural yogurt. The yogurt helps mellow the heat slightly and adds creaminess to the dish. Stir it in well so it doesn’t curdle. Now pour in ¼ cup of water, give everything a good mix, and reduce the heat to low. Cover the pan and let the curry simmer gently for about 20 minutes, or until the chicken is fully cooked through and tender. Stir occasionally during this time to make sure nothing sticks to the bottom.

Finish and Garnish

Once the chicken is cooked and the curry has thickened to your liking, turn off the heat. To finish, sprinkle freshly chopped coriander on top for a burst of freshness. You can also add some finely sliced ginger as an optional garnish. It gives the dish a nice aromatic edge and a beautiful presentation. Let the curry sit for a couple of minutes before serving to let the flavors settle in. And just like that, your Chicken Masala is ready to enjoy fragrant, spicy, and full of love.

Ingredients

  • 500g chicken thighs or breast (cut into 1½-inch pieces)

  • ¼ cup corn oil

  • 400g tinned chopped tomatoes

  • 5 garlic cloves, minced or grated

  • 1-inch piece of ginger, grated

  • 4 green chillies (whole or sliced)

  • 1 tsp salt (or to taste)

  • ½ tsp garam masala (Shan brand recommended!)

  • ¼ tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • A few black peppercorns (or ¼ tsp ground)

  • ½ tsp red chilli powder (adjust to taste)

  • 4 tbsp natural yogurt

  • ¼ cup water

  • Fresh coriander, finely chopped (for garnish)

  • Fresh ginger, thinly sliced (optional garnish)

Directions

  • In a pan over medium heat, add your oil. Once it’s hot, toss in the chopped tomatoes. Keep stirring until most of the water evaporates and the oil separates. Now add the garlic and ginger, cooking until fragrant. Time for the spices, add all your dry spices and stir-fry for one minute.
Add the chicken pieces and fry them with the masala for a few minutes so they get coated with all that spicy goodness.
  • Next, add the green chillies and yogurt. Stir everything well, then pour in the water. Mix again, cover, and let it simmer on low for about 20 minutes or until the chicken is fully cooked and tender.
  • Once done, turn off the heat and sprinkle fresh coriander and ginger slices on top for that final aromatic touch.

Notes

  • Once done, turn off the heat and sprinkle fresh coriander and ginger slices on top for that final aromatic touch.
  • Don’t rush the tomato base! Letting the oil separate ensures the masala is rich, not watery.
  • Be sure to cook the chicken evenly; undercooked pieces will ruin the whole bite.
  • Use plain yogurt, not flavored or sweetened it makes a big difference!
  • Simmer on low once you add the yogurt to avoid splitting the sauce.

Serving Suggestions

  • Serve hot with fluffy basmati rice or warm naan.
  • Add a side of cucumber raita or mixed salad to cool down the spice.
  • Leftovers taste even better the next day just reheat gently!
