Chilli Mango Lime Chicken (Easy Air Fryer Recipe)

Sometimes I want my chicken to be a little sweet, a little spicy, and totally juicy and that’s when I make Chilli Mango Lime Chicken! The flavors in this dish are so exciting. You get the sweetness from the ripe mango, a zing from the lime, and a bold kick from the chilli. Plus, the air fryer makes the chicken golden and perfect in under 30 minutes!

It’s one of those recipes that sounds fancy but is actually super easy. And when it’s done, the smell is amazing! This is a dish I love serving with sticky rice, and it’s always a crowd-pleaser.

Method

Blend the Marinade

To start, I prepare the marinade by combining all the flavorful ingredients in a blender. I toss in the roughly chopped ripe mango, red chilli, olive oil, red onion, lime juice, minced garlic, grated ginger, coriander powder, turmeric, paprika, ground black pepper, all-purpose seasoning, and a little brown sugar for extra sweetness. I also add a tablespoon of water to help everything blend smoothly. Once all the ingredients are in, I blitz the mixture until it becomes a thick, smooth marinade. I always taste it at this point and adjust the salt if needed. This marinade should be rich, tangy, a bit spicy, and slightly sweet just perfect.

Marinate the Chicken

Next, I get the chicken ready. I use thighs or drumsticks with the skin on and the bone in for extra juiciness. I take a knife and score the chicken pieces by making a few deep cuts into the flesh. This simple step helps the marinade soak into the meat better. Then, I pour about three-fourths of the blended marinade over the chicken in a large mixing bowl. I use my hands or a spoon to mix it well, making sure each piece is fully coated. After that, I cover the bowl and place it in the fridge to marinate for 2 to 3 hours. I set aside the remaining marinade in a separate container to use later during cooking.

Air Fry the Chicken

When it’s time to cook, I preheat my air fryer to 190°C (around 375°F). I take the marinated chicken out of the fridge and place the pieces skin-side down on the air fryer tray. I cook the chicken for 25 minutes in total. Halfway through the cooking time around the 12-minute mark I flip each piece over using tongs so both sides can get crispy and golden. At this point, I also brush the reserved marinade over the chicken to add extra flavor and moisture. When the cooking time is done, I check for doneness by using a meat thermometer (the internal temperature should be at least 74°C or 165°F), or I cut into a piece to make sure the juices run clear and the meat is no longer pink.

Garnish and Serve

Once the chicken is fully cooked, I carefully remove the pieces from the air fryer and arrange them on a nice serving plate. For a fresh finishing touch, I sprinkle finely chopped coriander leaves on top. The green herbs not only look beautiful against the golden chicken but also add a fresh pop of flavor. I love serving this dish with sticky rice it soaks up all those juicy mango-lime flavors perfectly!

Ingredients

  • Chicken

  • 1 kg chicken thighs or drumsticks (skin on, with bone)

  • Marinade

  • 1 large ripe mango (roughly chopped)

  • 1 red chilli

  • 1 tbsp olive oil

  • 1 small red onion (roughly chopped)

  • 1 lime, juiced

  • 1 tsp garlic (minced or paste)

  • ½ tsp ginger (finely grated or paste)

  • 1 tsp coriander powder

  • ¼ tsp brown sugar (optional)

  • ¼ tsp turmeric powder

  • ¼ tsp ground black pepper

  • 1 tsp all-purpose seasoning

  • 1 tsp paprika

  • Salt to taste

  • 1 tbsp water (for blending)

  • Garnish

  • A handful of fresh coriander (finely chopped)

Directions

  • First, I make the marinade by adding the chopped mango, red chilli, olive oil, red onion, lime juice, garlic, ginger, coriander powder, turmeric, paprika, black pepper, all-purpose seasoning, brown sugar (if using), salt, and 1 tablespoon of water into a blender. I blend everything until it’s super smooth and creamy. Then I taste the marinade and adjust the salt if needed.
  • Now, I take the chicken and use a knife to score the pieces. This means I cut a few deep lines into the meat so the marinade can soak in better. I pour about ¾ of the marinade over the chicken in a big bowl and mix it all together with my hands or a spoon to coat each piece. I cover the bowl and let it marinate in the fridge for 2 to 3 hours. I save the rest of the marinade for later.
  • When I’m ready to cook, I preheat the air fryer to 190°C. I place the chicken pieces on the air fryer tray, skin side down. Then I cook them for 25 minutes, flipping the pieces halfway through. At that halfway point, I also brush on the remaining marinade for extra flavor. Once the air fryer is done, I check if the chicken is cooked through by using a meat thermometer or cutting into a piece to make sure the juices run clear.
  • I take the chicken out and place it on a nice serving plate. Then I sprinkle some fresh chopped coriander on top. That little bit of green makes it look beautiful! I usually serve this chicken with sticky rice, and wow, it’s just so tasty.

Notes

  • Don’t skip scoring the chicken this helps the marinade get deep inside.
  • Use a ripe mango so the marinade is smooth and sweet.
  • Don’t toss the extra marinade, it adds even more flavor halfway through cooking.

Serving Suggestions

  • Sticky rice: Soft and perfect for soaking up the juicy marinade.
  • Coconut rice: Adds extra sweetness to balance the spice.
  • Mango salsa: For even more mango flavor!
  • Steamed veggies: Like broccoli or green beans for a light side.

Fun Fact

Did you know mango is the national fruit of both India and Pakistan? It’s also called the “king of fruits” because of its sweet, juicy flavor. When blended into a marinade, it helps tenderize the meat and adds a natural sweetness. So cool, right?

Conclusion

This Chilli Mango Lime Chicken is a recipe that feels exciting but is actually super simple. The mix of sweet, tangy, and spicy flavors makes every bite special. Plus, the air fryer makes it super quick and easy to cook.
