Crispy Smashed Broccoli with High-Protein Ranch

I’ve eaten broccoli in just about every way you can imagine, but this crispy smashed broccoli might be my favorite of them all. It bakes in a layer of fresh parmesan so the edges get golden and crunchy, and then it’s served with a creamy high-protein ranch dip that makes every bite irresistible. The best part? This recipe is easy, fun to make, and totally changes the way you think about eating broccoli.

Method

Boil and Shock the Broccoli

Start by bringing a large pot of water to a rolling boil. Add the broccoli florets and let them cook for only 3–4 minutes just long enough to soften slightly without becoming mushy. This quick boil will help the broccoli cook evenly in the oven later. As soon as the time is up, transfer the florets immediately to a large bowl of ice water. This “shocks” the broccoli, stopping the cooking process and locking in that vibrant green color. Once cooled, drain the broccoli well and gently pat each piece dry with paper towels. Removing as much moisture as possible is important so the parmesan and oil can stick properly and the broccoli crisps instead of steaming.

Prepare for Baking

Preheat your oven to 425°F. Line a baking sheet with parchment paper and sprinkle the grated parmesan in small piles or an even layer where you plan to place each piece of broccoli. Arrange the florets on top of the cheese. Using the flat bottom of a glass or cup, gently press down on each piece to smash it slightly. The goal is to flatten the broccoli enough so more surface touches the cheese, but not so much that it breaks apart.

Season and Bake

Once the broccoli is smashed, brush each piece generously with olive oil to help it crisp in the oven. Sprinkle evenly with garlic powder, kosher salt, and black pepper, making sure each floret gets a good coating. Transfer the baking sheet to the oven and bake for 25–30 minutes, or until the edges are deeply golden, the cheese has melted into a crisp layer, and the broccoli has a nice crunch.

Make the High-Protein Ranch

While the broccoli bakes, prepare the dip. Add the cottage cheese, Greek yogurt, chicken broth, garlic cloves, dried dill, dried parsley, and onion powder to a blender or food processor. Blend on high until the mixture is completely smooth and creamy, scraping down the sides if needed to incorporate all the ingredients. Adjust the thickness by adding a splash more broth if you prefer a thinner consistency.

Serve and Enjoy

When the broccoli is done, remove it from the oven and allow it to cool for just a minute or two so it’s easier to handle. Serve the crispy smashed broccoli warm, with the high-protein ranch dip on the side for dunking or drizzle the dip right over the top for extra flavor in every bite.

Ingredients

  • Crispy Smashed Parmesan Broccoli

  • 1 large crown broccoli, washed and cut into florets

  • ¼ cup olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon kosher salt

  • ½ teaspoon ground black pepper

  • ¾ cup freshly grated parmesan

  • High-Protein Ranch Dip

  • 1 cup cottage cheese

  • ¾ cup Greek yogurt

  • ¼ cup chicken broth

  • 3 cloves garlic

  • 1 tablespoon dried dill

  • 1 tablespoon dried parsley

  • 1 teaspoon onion powder

Directions

  • Boil and Shock the Broccoli:
Bring a pot of water to a rolling boil and add the broccoli florets. Boil for just 3–4 minutes no longer, or they’ll turn mushy. Immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain the broccoli and gently pat dry with paper towels, removing as much moisture as possible.
  • Prepare for Baking:
Preheat your oven to 425°F. On a parchment-lined baking sheet, spread the grated parmesan in an even layer where you plan to place each broccoli piece. Arrange the broccoli on top of the cheese. Using the flat bottom of a cup, gently smash each floret so it spreads out slightly and presses into the parmesan.
  • Season and Bake:
Brush the broccoli generously with olive oil, making sure each piece is coated. Sprinkle evenly with garlic powder, salt, and black pepper. Bake for 25–30 minutes, or until the edges are crispy and the cheese is golden brown.
  • Make the High-Protein Ranch:
While the broccoli bakes, add cottage cheese, Greek yogurt, chicken broth, garlic, dill, parsley, and onion powder to a blender or food processor. Blend until the mixture is completely smooth and creamy.
  • Serve and Enjoy:
Once the broccoli is crispy, remove it from the oven and let it cool slightly. Serve warm with the ranch dip on the side (or drizzle it over the top) for the ultimate cheesy-crunchy-creamy combo.

Notes

  • Don’t overboil the broccoli or it won’t crisp well in the oven.
  • Dry thoroughly after the ice bath excess water can make the cheese soggy.
  • Smash gently so the florets stay intact and hold together while baking.
  • Bake on parchment to prevent sticking and make cleanup easy.

Serving Suggestions

  • Snack Time: Serve as a healthy snack with extra dip for dunking.
  • Side Dish: Pair with grilled chicken, steak, or fish.
  • Party Platter: Make a double batch and serve as a fun appetizer.
  • Low-Carb Swap: Use in place of fries for a lighter side.

Fun Fact

Did you know broccoli is actually a member of the cabbage family? It’s been around for over 2,000 years and was first cultivated in Italy.

Conclusion

This crispy smashed broccoli with high-protein ranch is proof that veggies can be exciting. It’s cheesy, crunchy, and creamy all at once, and it works just as well for a snack as it does for a side dish. Once you try it, you might find yourself making broccoli this way all the time because when something tastes this good, you don’t need an excuse.
