Firecracker Chicken Recipes– Spicy, Juicy & Air-Fried Just Right!

If you’re looking for a meal that’s bold, fiery, and finger-lickin’ good, you’re going to love this Firecracker Chicken recipe! These chicken thighs are juicy on the inside, crispy on the outside, and full of punchy flavor from a spicy marinade. I love making this when I want something with a little heat and a lot of flavor but without spending forever in the kitchen. The best part? It’s made in the air fryer, so it’s quick, mess-free, and gives you that perfect crispy skin.

Whether you’re having a cozy dinner at home or feeding a crowd, this dish brings the boom. The marinade is packed with spices like paprika, coriander, and chilli powder. And if you’re brave enough to throw in that Scotch Bonnet, it’s a real firecracker (just like the name says)! Let’s get cooking, shall we?

Method

Step 1 – Marinate

This is where all the magic begins. First, you want to prep the chicken so it soaks up as much flavor as possible. Use a sharp knife to score the chicken thighs that means lightly cutting slits into the meat, especially if you’re using skin-on thighs. This helps the marinade seep deeper inside, making each bite juicy and well-seasoned. Place all the chicken pieces in a large mixing bowl.

Now it’s time to build flavor. Add paprika, chicken seasoning, red chilli powder, coriander powder, ground black pepper, onion granules, garlic, ginger, and that fiery Scotch Bonnet pepper but be sure to wear gloves while handling it! These chilies are no joke and can cause irritation if they touch your skin or eyes. Squeeze in fresh lemon juice, stir in the natural yogurt, and pour in a tablespoon of oil. Then, get in there and mix everything together until every piece of chicken is coated beautifully. Don’t forget to rub the marinade under the skin too, if your chicken has skin. Once coated, cover the bowl with a lid or wrap and place it in the fridge to marinate for at least 2 hours, though overnight is even better if you have the time. The longer it rests, the deeper the flavor.

Step 2 – Air Fry It Up

Once your chicken is fully marinated and you’re ready to cook, remove it from the fridge and let it sit at room temperature for about 10 minutes. Meanwhile, preheat your air fryer to 190°C (or 375°F). This helps the chicken start cooking right away and keeps the outside nice and crispy. Arrange the chicken thighs skin-side up on the air fryer tray or basket. Make sure there’s a little space between each piece you don’t want to crowd them, or they’ll steam instead of crisp.

Give the tops a light spray of oil to help them brown. Slide the tray in and cook for 20–22 minutes total, flipping the pieces halfway through the cooking time. Use a pair of tongs to turn each thigh carefully. Once they’re flipped, spray lightly with oil again if you want extra crispiness. To make sure the chicken is fully cooked, insert a meat thermometer into the thickest part of the thigh it should read at least 75°C (or 165°F) when done.

Step 3 – Glaze & Garnish

When the chicken is done cooking, it should look golden, juicy, and slightly charred on the edges yum! But don’t stop just yet. Using a spoon, gather the spicy, flavorful juices that have collected in the tray or bottom of the fryer and drizzle them back over the chicken. This not only keeps the chicken moist, but also adds an extra kick of flavor right before serving. Finally, chop up some fresh parsley and sprinkle it over the top for a fresh pop of color and herby finish. Serve it hot and get ready to watch it disappear fast!
