Honey Chipotle Shrimp: A Sweet & Spicy Bowl of Goodness

Hey friends! If you’re anything like me, you love a recipe that’s packed with flavor, super easy to make, and just a little bit fancy but not too fancy! This Honey Chipotle Shrimp Bowl hits all the right notes. It’s sweet, spicy, smoky, creamy, and fresh, all in one bowl. Whether you’re making it for a quick weeknight dinner or prepping lunch for the week, this bowl will not disappoint. Let’s get cooking!

Method

Make the Sauce & Salsa

To start things off, I like to prep the Honey Chipotle Yogurt Sauce and Mango Salsa first so they’re ready to go when the shrimp is hot and fresh. For the sauce, grab a blender or food processor and combine the Greek yogurt, one canned chipotle pepper, a tablespoon of the adobo sauce, honey, and seasonings like salt, garlic powder, onion powder, and smoked paprika. Blend it all up until smooth and creamy. If the sauce feels too thick, just add a splash of water at a time until it reaches your desired consistency. Set it aside in the fridge to chill while the flavors come together. Next, in a large bowl, mix up the mango salsa by tossing together diced mango, red bell pepper, jalapeño, red onion, chopped cilantro, and freshly squeezed lime juice. Give it a gentle stir, taste, and adjust the lime or cilantro if needed then set that aside too. Trust me, both of these make the dish pop with freshness and flavor!

Prep the Shrimp

Now it’s time to focus on the main star: the shrimp! If your shrimp still have the tails on, go ahead and remove them first. Place all your peeled and deveined shrimp in a mixing bowl. Drizzle in a bit of extra virgin olive oil, then spoon in 2 to 3 tablespoons of chipotles in adobo sauce and a quarter cup of honey.

Necessary Tools

  • Large mixing bowls
  • Measuring spoons & cups
  • Cutting board + sharp knife
  • Large skillet
  • Spatula or tongs
  • Blender or food processor (for the sauce)
  • Rice cooker or pot (for the jasmine rice)

Ingredients

  • For the Shrimp:

  • ~1.5 lbs XL peeled & deveined shrimp (I used wild-caught Argentine Red Shrimp)

  • Drizzle of extra virgin olive oil

  • 2–3 tbsp chipotles in adobo sauce

  • ¼ cup honey

  • Seasonings to taste: salt, pepper, garlic powder, onion powder, smoked paprika

  • For the Honey Chipotle Yogurt Sauce:

  • 1½ cups fat-free plain Greek yogurt

  • 1 canned chipotle pepper

  • 1 tbsp adobo sauce

  • ¼ cup honey

  • Seasonings to taste: salt, garlic powder, onion powder, smoked paprika

  • Water to thin it, if needed

  • For the Mango Salsa:

  • 2 cups diced mango

  • 1 diced red bell pepper

  • 1 diced jalapeño

  • ½ diced red onion

  • ¼ cup chopped cilantro

  • Juice of 1 lime

  • Toppings:

  • Sliced avocado

  • Extra chopped cilantro

  • Cooked jasmine rice (as your base)

Directions

  • Make the Sauce & Salsa:
Blend together all the honey chipotle yogurt sauce ingredients until smooth. Add water if you want it thinner.
In a separate bowl, mix the mango salsa ingredients and set aside.
  • Prep the Shrimp:
Remove the tails from your shrimp. In a bowl, toss them with olive oil, chipotles in adobo, honey, and seasonings. Make sure they’re all coated nicely.
  • Cook the Shrimp:
Heat a greased skillet over medium-high heat. Cook the shrimp for about 2–3 minutes per side, until they’re pink and a bit charred.
  • Build Your Bowl:
Add a scoop of rice, then pile on the shrimp, drizzle with yogurt sauce, spoon on mango salsa, and top with avocado and cilantro.

Notes

  • Don’t overcook the shrimp 2 to 3 minutes per side is plenty! Overcooked shrimp can turn rubbery fast.
  • Taste your sauce before serving. Chipotle peppers can vary in heat, so adjust the spice or honey as needed.
  • Add water slowly to the yogurt sauce too much can make it runny.

Serving Suggestions

  • Serve it in a bowl with rice or wrap it all up in a tortilla for shrimp tacos.
  • Great with a side of black beans or roasted corn.
  • For a low-carb version, swap jasmine rice with cauliflower rice or chopped lettuce.

Fun Fact

Argentine red shrimp cook super fast and have a natural sweetness, kind of like lobster. That’s why they work so well with chipotle and honey!

Conclusion

This Honey Chipotle Shrimp Bowl has become one of my top go-to meals! It’s got bold flavors, it’s colorful, and it feels like something you’d order at a fancy lunch spot but it’s totally doable at home. Try it out, play with the spice level, and make it your own. Trust me, your taste buds are going to love it!
