Kimchi Toastie Recipe (Cheesy, Spicy & Ready in 10 Minutes)

If you’re craving something cheesy, spicy, and full of bold flavor say hello to the Kimchi Toastie! This is not your average grilled cheese. It’s got melty mozzarella, sharp cheddar, and a kick of kimchi that turns every bite into a flavor explosion. Whether you toss it on the grill or crisp it up in the air fryer, this toastie is a total win. I make this when I want something fast, comforting, and just a little exciting. Let’s get into it!

Method

Butter the Bread

To get things started, I take two slices of bread and spread a generous layer of butter on one side of each slice. This buttered side is going to crisp up beautifully during cooking and give the toastie that golden, crunchy finish. Once both slices are buttered, I set them aside with the buttered sides facing down these will be the outsides of the sandwich when it cooks.

Load the Filling

Now for the flavorful heart of this toastie! On the plain (unbuttered) side of one slice of bread, I spread out a layer of sliced kimchi. I like to use @bibigo_uk’s version because it has just the right amount of spice and tang. I make sure to cover the surface evenly so I get a little kimchi in every bite. For an extra kick, I sometimes sprinkle a bit of gochugaru (Korean red pepper flakes) right on top it adds a warm heat that takes it to the next level.

Add the Cheese

Then it’s cheese time! I lay down some slices (or shreds) of mozzarella first. This gives the toastie that gooey, stretchy texture that makes every bite feel melty and indulgent. On top of that, I add a handful of grated mature cheddar for its bold, sharp flavor. The mix of cheeses gives the toastie both creaminess and punch.

Close and Cook

Once the fillings are in, I place the second slice of bread on top, this time with the buttered side facing up. Now it’s ready to cook! If I’m using the air fryer, I gently lift the sandwich onto the tray and set the temperature to 190°C. I let it cook for about 6–8 minutes, flipping halfway through to make sure both sides get evenly browned. If I’m using a grill or sandwich press, I just cook it until both sides are golden and the cheese has melted completely. You’ll know it’s done when the outside is crisp and the kitchen smells amazing.

Serve

After it’s cooked, I remove the toastie and let it rest for a minute just long enough to avoid burning my mouth! Then I slice it in half and watch that gooey cheese stretch. It’s crunchy, spicy, cheesy, and honestly, kind of addictive. The mix of kimchi and melted cheese is pure magic!

Ingredients

  • 2 slices of bread

  • Butter (for the outside of the bread)

  • Sliced kimchi (I used @bibigo_uk!)

  • Gochugaru (Korean red pepper flakes – optional)

  • Mozzarella cheese, sliced or grated

  • Mature cheddar cheese, grated

Directions

  • Butter the Bread:
First, I take two slices of bread and spread butter on one side of each slice. This will help the outside turn golden and crispy when it cooks. I set them aside with the buttered side facing down for now.
  • Load the Filling:
On the plain (unbuttered) side of one slice, I spread out the sliced kimchi evenly. I like to make sure every bite gets a bit of that spicy, tangy flavor. If I’m feeling adventurous, I sprinkle on a pinch of gochugaru to turn up the heat a little.
  • Add the Cheese:
Next comes the cheese magic! I layer on some mozzarella for that stretchy melt and then a handful of mature cheddar for a sharp, bold flavor. It’s all about that gooey cheese pull.
  • Close and Cook:
I place the other slice of bread on top, buttered side facing up. Then I pop the whole sandwich into my air fryer or onto a hot grill. If I’m using the air fryer, I set it to 190°C and cook for about 6–8 minutes, flipping halfway through if needed. On the grill, I toast each side until golden and the cheese is melted to perfection.
  • Serve:
Once it’s crispy and cheesy, I take it out and let it cool for just a minute before slicing it in half. It’s melty, crunchy, and totally irresistible!

Notes

  • Don’t overload with kimchi too much can make the toastie soggy.
  • Make sure the butter is spread edge to edge for even crisping.
  • Press the sandwich slightly before cooking to help seal it.
  • If using the air fryer, don’t stack multiple toasties cook one at a time for best crispiness.

Serving Suggestions

  • Serve with a side of kimchi or pickles for extra tang.
  • Add a bowl of tomato soup for a cozy, comforting combo.
  • Pair with crispy fries or sweet potato wedges.
  • Add an egg on top and make it a breakfast toastie!

Fun Fact

Did you know kimchi is over 3,000 years old? It’s a traditional Korean dish made by fermenting veggies usually cabbage with garlic, chili, and other seasonings. And it’s packed with probiotics!

Conclusion

This Kimchi Toastie is my go-to when I want something fun, flavorful, and fast. It’s cheesy, spicy, and a little crunchy basically everything you want in a perfect sandwich. Give it a try next time you’re bored with plain grilled cheese. I promise, your taste buds will thank you!
