Korean Style Burgers (Inspired by Bulgogi & Galbi Flavors!)

You have to try these Korean Style Burgers. I recently got my hands on a Modern Seoul burger kit from @celeplate, and it was love at first bite. Seriously. The combo of sweet bulgogi, juicy galbi, and chunky, crispy chips was absolutely perfect. I couldn’t stop smiling the entire meal.

If you’re craving something bold, flavorful, and just a little different than your usual burger night, these Korean-inspired beauties are exactly what you need. And don’t worry this homemade version is super easy to make and packed with the same punch. Let’s get into it!

Method

Marinate the Patties

Start by prepping your beef patties one for the bulgogi burger and one for the galbi. For the bulgogi patty, combine soy sauce, sesame oil, brown sugar, grated garlic, grated ginger, and a pinch of black pepper in a small bowl. Rub this mixture gently into the beef, making sure it’s evenly coated but not overworked. For the galbi patty, mix together galbi sauce (or Korean BBQ marinade), rice vinegar, honey, and gochujang if you’re going for a spicy kick. Massage this mixture into the second beef patty. Set both patties aside and let them rest for at least 10 minutes so the flavors have time to soak in while you prep the other elements.

Make the Chunky Chips

While the patties are marinating, it’s time to tackle the chips. Preheat your oven to 200°C (or 400°F). Wash and cut the potatoes into thick wedges aim for consistency in size so they cook evenly. Toss the wedges in olive oil and a sprinkle of salt, making sure they’re all well coated. Arrange them on a baking tray in a single layer, leaving space between each piece. This helps them roast properly instead of steaming. Bake for 25 to 30 minutes, flipping the wedges halfway through to ensure both sides turn golden and crispy.

Cook the Burgers

Once your chips are in the oven, heat a grill pan or skillet over medium-high heat until it’s nice and hot. Place both marinated patties in the pan, giving them room to sizzle. Cook each patty for about 3 to 4 minutes on each side. You want a slightly caramelized crust while keeping the inside juicy. If you’re using cheese slices, add them on top during the last minute of cooking and cover the pan loosely to help the cheese melt beautifully.

Toast the Buns

While the patties finish up, slice your brioche buns and place them cut-side down on the same pan. Let them toast for about a minute or until they’re lightly golden and warm. This step makes a huge difference in both texture and flavor, giving the buns that slight crunch on the inside while keeping the outside soft.

Assemble Your Burgers

Now for the fun part assembly! Start by spreading mayo or gochujang mayo on the bottom half of each bun. Layer on some fresh lettuce for crunch, followed by the cooked patty one bulgogi, one galbi. Add pickled onions for tang and kimchi if you want that bold, fermented zing (which I highly recommend). Place the top bun on and gently press everything together. Serve immediately with a big pile of chunky chips on the side.

Ingredients

  • For the Bulgogi Burger

  • 1 beef patty or 150g ground beef

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp brown sugar

  • 1 garlic clove (grated)

  • ½ tsp ginger (grated)

  • Pinch of black pepper

  • For the Galbi Burger

  • 1 beef patty or 150g ground beef

  • 1 tbsp galbi sauce (or Korean BBQ marinade)

  • ½ tsp rice vinegar

  • ½ tsp honey

  • 1 tsp gochujang (optional for heat)

  • For the Chips

  • 2 large potatoes (cut into chunky wedges)

  • 1 tbsp olive oil

  • Salt to taste

  • Burger Fixings

  • 2 brioche buns

  • Sliced lettuce

  • Kimchi (optional but amazing)

  • Pickled onions

  • Mayo or gochujang mayo

  • Cheese slices (your choice)

Directions

  • Marinate the Patties:
Start by seasoning one patty with the bulgogi mix and the other with the galbi mix. Use your hands to gently massage the flavors into the meat. Let them sit for at least 10 minutes while you prep the rest.
  • Make the Chunky Chips:
Toss the potato wedges with olive oil and a little salt. Lay them flat on a baking tray and roast at 200°C (400°F) for about 25-30 minutes until golden and crispy, flipping halfway through.
  • Cook the Burgers:
Heat your grill pan or skillet over medium-high heat. Cook both burgers for about 3–4 minutes per side, or until they’re cooked through and slightly caramelized. Add cheese during the last minute if using.
  • Toast the Buns:
Place the brioche buns cut-side down on the same pan for about a minute to get them warm and golden.
  • Assemble Your Burgers:
Spread mayo or gochujang mayo on the buns. Add lettuce, the burger patty, pickled onions, and kimchi if you like that extra zing. Sandwich it all together and serve with the chunky chips.

Notes

  • Don’t over-mix the patties when marinating, or they’ll get tough.
  • Make sure your pan is hot before adding the patties to get a good sear.
  • Let the burgers rest for a minute before assembling, so the juices stay inside.
  • Space your potato wedges out on the tray; crowding them will make them soggy instead of crispy.

Serving Suggestions

  • Serve with a cold fizzy drink or Korean soda like Milkis or Chilsung Cider.
  • Add a side of cucumber kimchi for crunch.
  • For extra heat, dip the chips in gochujang-mayo or spicy ketchup.
  • These also go great with a fried egg on top for brunch vibes!

Fun Fact

“Bulgogi” literally means “fire meat” in Korean. It’s traditionally grilled over an open flame, giving it that signature sweet and smoky flavor. Now you can bring that same magic to your burger!

Conclusion

These Korean Style Burgers are bursting with flavor from sweet and savory bulgogi to bold galbi spice. They’re easy to make at home and bring a little something special to your burger night. Whether you’re a kimchi fan or just love trying new flavors, you’ll want to make these again and again. I already want another bite.
