It pairs perfectly with naan or basmati rice. Trust me, this will become a family favorite! Let’s dive into the recipe!

Method

Searing the Short Ribs

Start by seasoning the beef short ribs generously with salt and cracked black pepper on all sides. Heat a large pot or pan on high heat and add the vegetable oil. Once the oil is hot, carefully place the short ribs in the pan, searing each side for a few minutes until they develop a nice golden-brown crust. This step is crucial because it helps lock in the juices, making the ribs tender and flavorful. After searing, remove the ribs from the pan and set them aside. Be sure not to discard the oil in the pan, as it will be used in the next steps.

Preparing the Masala Base

In a food processor or chopper, combine the roughly chopped tomatoes, onion, garlic cloves, and ginger. Blitz everything until smooth, creating a flavorful paste. Now, using the same pan with the remaining oil, reduce the heat to medium and add this mixture to the pan. Stir frequently and cook until about half of the water from the paste has evaporated. This will concentrate the flavors and make the masala base more aromatic, setting the stage for the rich sauce that will coat the ribs.

Adding the Spices

Once the masala paste has cooked down, it’s time to add the dry spices. Add garam masala, cumin powder, coriander powder, red chili powder, and turmeric powder to the pan. Stir everything well, allowing the spices to fry in the oil for about a minute. This helps release their essential oils and enhances the flavor of the masala. After the spices have cooked, pour in 1 1/2 cups of water and stir everything together. Bring the mixture to a boil, making sure all the ingredients are well combined.

Simmering the Short Ribs

Now it’s time to add the seared short ribs back to the pan. Make sure the ribs are fully submerged in the flavorful masala sauce. Reduce the heat to medium-low, cover the pan, and let it simmer for 2 1/2 hours. This slow cooking process allows the beef to become tender and infused with all the spices. As the ribs cook, check the liquid level periodically. If you notice the sauce reducing too much, feel free to add a little more water to maintain a rich sauce consistency. Also, during the simmering, spoon out any excess fat that rises to the top of the dish.

Finishing Touches and Serving

Once the meat is tender and almost falling off the bone, turn off the heat. To finish, sprinkle some freshly chopped coriander and a few chili slices over the dish for a burst of freshness and color. Cover the pan for another 5 minutes to allow the flavors to meld together. This will give the final dish a well-rounded taste. After that, your Masala Beef Short Ribs are ready to serve. Enjoy the tender, flavorful ribs with a side of warm naan bread or basmati rice for the perfect meal!

Once it’s hot, sear the short ribs on all sides to get a beautiful brown color. After that, remove the short ribs from the pan and set them aside. (Don’t discard the oil, we’re going to use it!)
  • In your food processor or chopper, add the tomatoes, onion, garlic, and ginger. Blitz everything until smooth. In the same pan, on medium heat, add this mixture and fry it until half of the water has evaporated. This will help concentrate the flavors.
  • It’s time to add the dry spices garam masala, cumin powder, coriander powder, red chili powder, and turmeric powder. Fry everything for another minute, stirring to combine. Then, pour in 1 1/2 cups of water and bring everything to a boil.
  • Now, add the seared short ribs back to the pan, ensuring they are submerged in the delicious masala sauce. Reduce the heat to medium-low, cover, and let it simmer for about 2 1/2 hours. You’ll know it’s ready when the meat is tender and almost falling off the bone. Don’t forget to spoon out any excess fat that rises to the top!
  • Turn off the heat, and sprinkle fresh coriander and a few chili slices on top. Cover the pan for another 5 minutes to let all the flavors meld together. And voila! You’re ready to serve these tender, flavorful short ribs.

Notes

  • Don’t rush the searing process – Searing the beef short ribs properly helps to lock in the juices, making the ribs tender and flavorful. Make sure each side gets a nice golden brown color.
  • Keep an eye on the liquid – If you find that the masala sauce is drying up, feel free to add a bit more water. You want the sauce to stay nice and rich as it cooks.
  • Be mindful of the heat – Once you’ve added the short ribs and spices, simmer the dish on low heat. High heat can make the meat tough instead of tender.
