One-Pan High-Protein Brownie Oatmeal Bake

Looking for a delicious, healthy, and easy  to  make breakfast or dessert? Try this One  Pan High Protein Brownie Oatmeal Bake! It’s a TikTok trend that I’ve made even better by adding extra protein to keep you fuller longer. It’s perfect for busy mornings or a quick dessert, and the best part is, it only takes 5 minutes of prep time! When you’re ready to enjoy, just warm it up. Top it with vanilla Greek yogurt for a protein boost or whipped cream for a sweet dessert treat.

Method

Preheat the Oven

Start by preheating your oven to 350°F (175°C). It’s important to get the oven nice and hot so that the bake cooks evenly. While the oven is heating up, prepare your baking dish by spraying it generously with cooking spray. This will help prevent the oatmeal bake from sticking to the dish as it bakes.

Mash the Bananas

Next, peel the three ripe bananas and place them in a large mixing bowl. Use a fork or potato masher to mash them until they are smooth and paste  like. Make sure there are no big chunks, as a smooth banana mixture creates the best texture for the bake. The riper the bananas, the easier they will mash, and they’ll also add more natural sweetness to the dish.

Mix the Ingredients

Once the bananas are mashed, add the rolled oats, chia seeds, unsweetened cocoa powder, and vanilla extract to the mashed bananas. Then, pour in your milk of choice (I use almond milk) and the egg whites (or extra milk for a vegan version). Stir everything together well until the ingredients are fully incorporated and the mixture is smooth. This is the base of the bake, so make sure everything is mixed evenly for the best result.

Add the Chocolate Chips

Now comes the fun part! Stir in the chocolate chips and make sure they’re evenly distributed throughout the mixture. To make the dish even more chocolatey, you can sprinkle a few extra chocolate chips on top before baking. The chocolate chips melt into the oatmeal bake, creating little pockets of rich, chocolatey goodness.

Bake

Once everything is mixed, pour the mixture into the prepared 9×13 baking dish. Spread it out evenly so that it bakes evenly. Place the dish in the preheated oven and bake for 25  30 minutes. You’ll know it’s done when the top of the bake is firm to the touch and slightly golden around the edges. If you poke the center with a fork, it should come out clean, indicating that the liquid has been absorbed and the oatmeal bake is set.

Serve and Enjoy

Once the One  Pan High  Protein Brownie Oatmeal Bake is done, remove it from the oven and let it cool for a few minutes. Serve it warm and enjoy right away! For an extra protein boost, top it with a dollop of vanilla Greek yogurt, or add a little whipped cream if you’re serving it as a dessert. You can also enjoy it the next day by warming it up and adding your favorite toppings.

Ingredients

  • 3 large ripe bananas

  • 1 3/4 cups rolled oats

  • 1/4 cup chia seeds

  • 1/4 cup unsweetened cocoa powder

  • 2 tsp vanilla extract

  • 1 cup milk of choice (I use almond milk)

  • 1 cup egg whites (*For a vegan option, omit the egg whites and use 2 cups milk of choice instead!)

  • 1 1/4 cups chocolate chips (your choice)

Directions

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Then, generously spray a 9×13 baking dish with cooking spray to prevent the oatmeal bake from sticking.
Mash the Bananas: Peel the ripe bananas and mash them well in a mixing bowl. The more mashed they are, the better the consistency will be.
Mix the Ingredients: Add the rolled oats, chia seeds, unsweetened cocoa powder, vanilla extract, milk, and egg whites to the mashed bananas. Stir everything together until well combined.
Add the Chocolate Chips: Stir in the chocolate chips, and then sprinkle a few extra on top of the mixture for that extra chocolatey goodness.

Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 25  30 minutes, or until the liquid is absorbed, and the bake is set. You’ll know it’s done when the top is firm and slightly golden.
Serve and Enjoy: Once it’s done, remove it from the oven and let it cool for a few minutes. Serve it warm and enjoy!

Notes

  • Banana Consistency: Be sure to mash the bananas well so that the mixture has a smooth texture. If you don’t mash the bananas enough, the bake might not set properly.
Vegan Option: If you’re going vegan, simply skip the egg whites and use 2 cups of your preferred milk instead.
Baking Time: Keep an eye on the baking time. If you’re using a different size dish or adjusting the recipe, the cooking time might vary slightly. Check around 25 minutes to see if it’s done  poke the center with a fork, and it should come out clean.
