If you’re a fan of pizza and big, hearty salads like I am, you’re going to love this Pizza Salad with Creamy Parmesan Dressing! Inspired by one of my favorite dishes at Little Original Joe’s in San Francisco, this salad is packed with all the delicious pizza toppings we all crave, but in salad form! From the crispy pepperoni to the tangy dressing, this salad is an explosion of flavors that’s as satisfying as your favorite pizza. I swapped out provolone cheese for a few of my own tweaks, but feel free to adjust it to your liking!
Method
Start by making the dressing. In a blender, combine the extra virgin olive oil, Dijon mustard, honey, mashed garlic, lemon juice, red wine vinegar, freshly grated Parmigiano Reggiano, kosher salt, and black pepper. Blend everything together until smooth and creamy. Once blended, taste the dressing and adjust the seasonings as needed, adding more salt or vinegar if you prefer extra tang. Once the dressing is perfect, set it aside.
While the dressing is blending, move on to preparing the salad ingredients. Begin by chopping the romaine lettuce into bite-sized pieces and placing it in a large salad bowl. Then, slice the baby tomatoes in half, finely slice the red onion, and chop the mushrooms and pepperoncini. Rinse and drain the kidney and garbanzo beans, and slice the black olives. For the pepperoni, chop it into small pieces, and for the croutons, chop them into bite-sized chunks.
Once all the salad ingredients are prepared, it’s time to assemble the salad. Start by layering the chopped romaine lettuce at the base of the bowl. Then, add the halved baby tomatoes, finely sliced red onion, kidney and garbanzo beans, sliced mushrooms, chopped pepperoncini, black olives, chopped pepperoni, and croutons, creating a colorful and delicious combination of textures and flavors.
Finally, dress the salad by pouring the creamy Parmesan dressing over the top. Toss everything gently but thoroughly to ensure all the ingredients are well-coated in the tangy, creamy dressing.Serve and enjoy! Serve the pizza salad immediately while the croutons are still crunchy, and enjoy the fresh, savory, and satisfying combination of pizza-inspired toppings in salad form.
