Sweet Chilli Chicken Thighs: Juicy, Sticky, and Totally Delicious!

If you’re looking for a quick dinner that’s full of flavor and super satisfying, these Sweet Chilli Chicken Thighs are a total winner! I love how the air fryer makes them crispy on the outside and juicy on the inside  and that sticky, sweet chilli glaze? Game-changer! I’ve made this recipe on busy weeknights and even for small gatherings, and everyone always asks for seconds.

The mix of garlic, ginger, chilli flakes, and sweet chilli sauce hits all the right notes: sweet, spicy, tangy, and savory. It’s also super simple  just marinate, air fry, and enjoy. If you’ve got some fresh coriander and sesame seeds lying around, those little extras make it pop!

Method

Marinating the Chicken

Start by placing the chicken thighs into a large mixing bowl. Make sure the skin is on and the bones are in  this helps lock in moisture and flavor during cooking. Before adding anything else, gently pat the chicken dry with paper towels to help the marinade stick better. Now, add in all your flavorful ingredients: light soy sauce, tomato ketchup, sweet chilli sauce, minced garlic, grated ginger, chilli flakes (adjust to your spice level), fresh lemon juice, a splash of water, and a tablespoon of oil. Use a spoon or tongs to mix everything together, making sure every piece of chicken is fully coated in that sticky, spicy-sweet mixture. Let the chicken marinate for at least one hour at room temperature. If you’ve got extra time, cover the bowl and pop it in the fridge overnight for deeper flavor  trust me, it’s worth the wait!

Air Frying Time

Once your chicken is marinated and full of flavor, it’s time to cook. Preheat your air fryer to 200°C (or 390°F) to make sure it’s nice and hot before the chicken goes in. Arrange the chicken thighs on the air fryer tray or basket with the skin side facing up. Give them a little room to breathe  don’t let the pieces touch or overlap, or they won’t crisp up evenly. Cook the chicken for a total of 22 minutes, flipping each piece over at the halfway mark (around 11 minutes in). This helps both sides get beautifully golden and crisp while staying juicy on the inside.

Finishing Touches

Once the timer goes off, carefully take a peek at the thickest part of the chicken to check for doneness. It should be steaming hot, no longer pink inside, and the juices should run clear. If needed, pop it back in for a couple more minutes. When it’s ready, transfer the chicken to a serving dish. For an extra burst of freshness and flavor, sprinkle over some chopped fresh coriander and a few sesame seeds. These little toppings aren’t just pretty  they add a delicious final touch!

Ingredients

  • 1kg Chicken thighs (skin on, bone in) – washed and patted dry

  • 3 tsp Light soy sauce

  • 1 tbsp Tomato ketchup

  • 1/3 cup Sweet chilli sauce

  • 1 tsp Garlic (minced)

  • 1 tsp Ginger (finely grated)

  • 1 tsp Chilli flakes (or to taste)

  • 1/2 a Lemon (juiced)

  • 1 tbsp Water

  • 1 tbsp Oil

  • Garnish: Fresh coriander and sesame seeds (optional)

Directions

  • Place your chicken thighs in a large bowl. Add soy sauce, ketchup, sweet chilli sauce, garlic, ginger, chilli flakes, lemon juice, water, and oil. Mix really well to coat all the chicken pieces. Let it marinate for at least 1 hour, or cover and refrigerate overnight for more flavor.
  • Preheat your air fryer to 200°C. Place the chicken thighs on the tray, skin side up. Air fry for 22 minutes, flipping halfway through (around the 11-minute mark).
  • Once the timer’s up, check that the chicken is fully cooked  it should be golden and juicy with no pink inside. Take them out and sprinkle with fresh coriander and sesame seeds if you like.

Notes

  • Don’t skip drying the chicken  this helps the marinade stick better and gives crispier skin.
  • Don’t overcrowd the air fryer  leave space between each thigh so they cook evenly.
  • Flip the chicken halfway for the best crispy finish on both sides.
  • Check doneness by cutting into the thickest part  no pink, just juicy goodness!
  • Marinating longer = more flavor  overnight is ideal if you’ve got the time.

Serving Suggestions

  • Serve it with jasmine rice or coconut rice for a full meal
  • Pair with stir-fried veggies or an Asian-style slaw
  • Slice leftovers for wraps or salads the next day
  • Dip into extra sweet chilli sauce for even more flavor

Fun Fact

Did you know sweet chilli sauce was originally used in Thai street food? It’s made from red chillies, vinegar, sugar, and garlic  the perfect combo for sticky, tasty glazes like this one!

Conclusion

These Sweet Chilli Chicken Thighs are one of my favorite quick air fryer recipes  flavorful, simple, and always a hit. Whether you serve them for a weekday dinner or a laid-back weekend treat, they bring that sweet-and-spicy joy to the table with barely any effort.
