Sweetgreen Elote Bowl (Easy Copycat Recipe at Home)

If you’ve ever had the Sweetgreen Elote Bowl, you know it’s packed with flavor, crunch, and that amazing cilantro lime dressing. I’ve been recreating my favorite Sweetgreen menu items at home, and this bowl is one of my top picks for spring and summer. It’s bright, fresh, filling, and super satisfying. I love how it’s both veggie-forward and protein-rich, thanks to the quinoa and seeds. And let’s be real the dressing is the star. I would put that cilantro lime magic on everything!

Whether you’re making lunch for the week or prepping a fun dinner for friends, this bowl checks all the boxes: crunchy, creamy, tangy, and colorful. Let’s make it together!

Method (In Depth)

Make the Dressing

Start with the star of the show the cilantro lime dressing. Add the olive oil, chopped cilantro, apple cider vinegar, maple syrup, lime juice, jalapeño (seeds removed), garlic cloves, salt, and pepper to a small blender. Blend everything until completely smooth. You want the texture to be silky and pourable, not chunky. Once blended, give it a taste and adjust as needed. Add a little more lime for brightness, a touch more maple syrup if you like it sweeter, or a pinch more salt for balance. Set it aside to let the flavors mingle while you prepare the rest of the bowl.

Cook the Quinoa

If you haven’t cooked your quinoa yet, do that now. Prepare 2 cups of cooked quinoa according to the instructions on your package. Once it’s fluffy and tender, fluff it with a fork and set it aside to cool slightly. You want the quinoa warm, not piping hot, so it doesn’t wilt the greens when you assemble the salad.

Sauté the Corn and Peppers

Next, heat a small skillet over medium heat. Add a teaspoon of olive oil to the pan, then toss in the frozen corn, finely diced red bell peppers, cumin, and a pinch of salt. Sauté this mixture for about 6 to 7 minutes, stirring occasionally, until the corn is heated through and lightly golden and the bell peppers have softened. The cumin adds a warm, smoky flavor that really brings the bowl together. Once cooked, remove the skillet from heat and let the mixture cool slightly.

Assemble the Bowls

Now comes the fun part building your bowls. Start with a base of fresh arugula in each bowl. Then spoon in your quinoa, followed by shredded purple cabbage, halved cherry tomatoes, and a sprinkle of sunflower seeds. Layer the warm corn and pepper mixture on top, then crumble on the cotija cheese (or goat cheese if you prefer the softer texture). Finally, finish with a generous handful of crushed tortilla chips. These add the perfect crunchy bite that makes the salad feel complete.

Dress and Serve

When you’re ready to eat, drizzle that bright green cilantro lime dressing generously over the top of each bowl. You can toss everything together if you want a full mix of flavors in every bite, or leave the ingredients layered for a pretty presentation. Either way, dig in and enjoy a salad that’s creamy, crunchy, tangy, and totally satisfying.

  • 1 cup cilantro, chopped and packed

  • 3 tablespoons apple cider vinegar

  • 2 tablespoons maple syrup

  • Juice of 2 limes

  • 1 small jalapeño, seeds removed and chopped

  • 3 garlic cloves

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon kosher salt

  • Salad Base & Toppings:

  • 1 1/2 cups frozen corn

  • 2 red bell peppers, finely diced

  • 1 teaspoon cumin

  • 1 teaspoon olive oil

  • 2 cups cooked quinoa

  • 4 cups arugula

  • 1 1/2 cups shredded purple cabbage

  • 1 cup baby tomatoes, halved

  • 1/4 cup sunflower seeds

  • 1/3 cup cotija cheese (or goat cheese for a softer version)

  • 3/4 cup crushed tortilla chips

Directions

  • Make the Dressing:
Start by adding all the dressing ingredients olive oil, chopped cilantro, vinegar, maple syrup, lime juice, jalapeño, garlic, salt, and pepper into a blender. Blend until smooth. Taste and adjust: add more lime for tang, more syrup for sweetness, or a pinch of salt to brighten the flavor. Set it aside while you prep the rest.
  • Cook the Quinoa:
If you haven’t already, cook 2 cups worth of quinoa following the package instructions. Once done, fluff with a fork and let it cool slightly before adding to the salad.
  • Sauté the Corn and Peppers:
Heat a small skillet over medium heat and add 1 teaspoon of olive oil. Once hot, add the frozen corn, diced red bell peppers, cumin, and a pinch of salt. Cook for about 6–7 minutes, stirring occasionally, until the corn is warm and golden and the peppers are slightly soft. Remove from heat and set aside.
  • Assemble the Bowls:
Now for the fun part! In each bowl, start with a base of arugula. Add a scoop of quinoa, then layer on the cabbage, tomatoes, sunflower seeds, sautéed corn and peppers, and crumbled cheese. Finish with a generous sprinkle of crushed tortilla chips for that perfect crunch.
  • Dress and Serve:
Drizzle the cilantro lime dressing over the top, toss everything together (or not your choice), and enjoy! Every bite is fresh, zesty, creamy, and crunchy. Just the way I like it.

Notes

  • Don’t skip blending the dressing well it needs to be smooth so it coats everything evenly.
  • Make sure your quinoa is fully cooled before adding, or it might wilt the greens.
  • Only add the tortilla chips right before serving so they stay nice and crunchy.
  • Taste the dressing before serving it’s easy to adjust with a little extra lime, maple, or salt.

Serving Suggestions

  • Serve this cold as a refreshing lunch or dinner on a warm day.
  • Pair it with grilled chicken or shrimp for even more protein.
  • Make it ahead and keep the components separate just add the dressing and chips before serving.
  • Perfect for potlucks or build-your-own salad nights!

Fun Fact

“Elote” is the Spanish word for grilled corn on the cob, often served with lime, cheese, chili, and mayo. This bowl takes all those yummy flavors and turns them into a fresh, modern salad!
