Method

Step 1 – Mix It Up

First, I start by preparing the marinade. In a big mixing bowl, I combine the plain yogurt, freshly squeezed lemon juice, garlic paste, ginger paste, tikka masala seasoning, and oil. I use a spoon or whisk to stir everything together until it’s smooth, creamy, and full of that amazing tikka aroma. This thick marinade is going to coat the chicken and soak into every part, so I like to make sure it’s well blended. Once it’s ready, I set it aside while I get the chicken prepped.

Step 2 – Prep the Chicken

Next, I take my whole chicken, which should already be washed and patted dry, and place it into a large ovenproof dish or roasting tin. Using a sharp knife, I carefully cut deep slits into the breast and legs of the chicken. These slits are really important because they let the marinade get deep inside, so every bite is full of flavor. I then pour the marinade over the chicken, making sure to rub it in well especially into those slits. It might get a little messy, but that’s the fun part! Once the chicken is fully coated, I cover the dish and place it in the fridge. I like to marinate it for at least 3 to 4 hours, but if I have time, I’ll leave it overnight for the best flavor.

Step 3 – Bake It

When it’s time to cook, I preheat the oven to 190°C (fan 170°C or Gas Mark 5). Before putting the chicken in, I add about half a cup of water to the bottom of the dish. This helps keep the chicken moist while it cooks. Then, I stuff the cavity of the chicken with the halved onion. You can also add in the lemon halves if you like extra citrus flavor. I cover the chicken loosely with aluminum foil, making sure it’s not pressed too tightly, and then place the dish on the middle shelf of the oven. I roast the chicken for 1 hour and 10 minutes, but I don’t just let it sit I baste it 2 to 3 times throughout the cooking time by spooning the delicious juices from the bottom of the pan over the top. This keeps the meat juicy and full of flavor. After the first hour and ten minutes, I remove the foil and return the chicken to the oven for another 15 minutes. This last step helps the skin become crispy and golden brown. I always check with a meat thermometer to make sure the chicken is fully cooked, especially near the bone.

Step 4 – Rest and Serve

After baking, I take the chicken out and let it rest for about 15 minutes. This step is super important! It gives the juices time to settle inside the meat, making the chicken extra tender and flavorful when I cut into it. After it rests, I slice it up and serve it while it’s still nice and warm.

Ingredients

  • For the Chicken

  • 1 large whole chicken (about 1.5 kg), skin on, washed and patted dry

  • 1 onion, cut in half

  • For the Marinade:

  • 1 lemon, juiced

  • ½ cup plain yogurt, whipped

  • 2 teaspoons garlic paste

  • 1 teaspoon ginger paste

  • 3 tablespoons tikka masala dry seasoning (use 4 tbsp if you like it hot!)

  • 1 tablespoon oil

Directions

  • Mix It Up
In a big bowl, mix all the marinade ingredients together. Stir until it looks smooth and creamy. Set it aside for a minute.
  • Prep the Chicken
Place your whole chicken into a large ovenproof dish. Use a sharp knife to cut deep slits in the chicken’s breast and legs. This helps the flavor soak all the way in. Pour the marinade over the chicken, making sure to rub it into the slits. Cover the dish and place it in the fridge for 3 to 4 hours or even better, overnight!
  • Bake It
Preheat your oven to 190°C (fan 170°C or Gas 5). Add ½ cup of water to the bottom of the dish. Stuff the inside of the chicken with the onion (and lemon too, if you want!). Loosely cover the chicken with foil and bake it for 1 hour and 10 minutes.
While it cooks, baste it 2 to 3 times with the juices from the pan. This keeps it nice and juicy. After that, remove the foil and bake for 15 more minutes until the skin turns crispy and golden. Use a meat thermometer if you have one make sure the inside is fully cooked!
  • Rest and Serve
Let the chicken rest for 15 minutes after baking. This helps the juices stay inside. Then, carve it up and serve!

Notes

  • Don’t skip the slits in the chicken this helps the marinade get deep inside.
  • Marinate long enough for the best flavor. The longer, the better!
  • Basting is key keep the chicken moist by spooning the juices over it while baking.
  • Cover loosely with foil so the skin doesn’t burn before the inside is done.
  • Let it rest before cutting! This locks in all the yummy juices.

Serving Suggestions

  • Rice: Soft, steamy basmati rice is perfect.
  • Naan: Toasted naan bread makes it even more amazing.
  • Raita: A cool yogurt sauce to balance the spice.
  • Fresh Salad: Add some crunch with a cucumber and tomato salad.
