Tomato Basil Garlic Soup is a warm, comforting, and flavorful dish made with ripe tomatoes, fresh basil, and aromatic garlic simmered into a rich and nourishing soup. This easy Tomato Basil Garlic Soup recipe blends simple ingredients to create a smooth, tangy, and slightly sweet flavor profile that is perfect for any season. Loved as a healthy appetizer or light meal, Tomato Basil Garlic Soup is known for its freshness, simplicity, and restaurant-style taste at home.
Method
To begin, sauté the veggies by adding olive oil to the jug of your soup maker and pressing the sauté button. Allow the olive oil to heat for about a minute, then add the diced onions. Sauté the onions for 2-3 minutes, stirring occasionally with a wooden spoon until they begin to soften and become translucent. Next, add the diced red bell peppers and continue to sauté for an additional minute, allowing the peppers to soften and combine with the onions. Once this step is done, press the sauté button again to turn off the function.
The next step is to add the rest of the ingredients. Into the soup maker, add the diced tomatoes, minced black garlic, fresh basil, and tomato puree. For an extra kick, toss in a pinch of chili flakes, if desired. Then, add your choice of chicken or vegetable stock pot and pour in 500ml of water. Season with a pinch of salt and black pepper, to taste. Give everything a good stir, ensuring the ingredients are evenly mixed in the jug.
Once all the ingredients are added, it’s time to cook it all together. Close the lid of the soup maker securely and select the ‘smooth’ setting. The soup maker will now cook and blend the ingredients for 21 minutes, during which time it will heat the soup to the perfect temperature and create a smooth, velvety texture. After the cooking cycle is complete, carefully serve and enjoy! Open the lid of the soup maker, and pour the creamy soup into bowls. For an extra burst of flavor, top the soup with freshly cracked black pepper and torn basil leaves. This soup pairs wonderfully with the Three Cheese Toastie, which adds the perfect crunchy contrast to the rich, savory soup.

- Add the rest of the ingredients – Now it’s time to add the diced tomatoes, black garlic, fresh basil, tomato puree, chili flakes (if you like a bit of spice), stock pot, water, and a pinch of salt and black pepper. Stir everything together to mix.
- Cook it all together – Close the lid of the jug, select the ‘smooth’ setting on your soup maker, and let it cook for the next 21 minutes. The machine will take care of blending and heating everything to perfection.

Notes
- Be careful when handling the soup maker, especially after the cooking cycle ends. The jug will be hot, so use oven mitts or a cloth to lift the lid.
- If you’re using chili flakes, be cautious with the amount – just a pinch can add a nice kick, but too much can make it quite spicy.
- Make sure to stir the ingredients well when adding everything into the soup maker to avoid uneven cooking.
