Frozen Protein S’mores

If you love s’mores but want a cool, creamy twist, you’re going to adore these Frozen Protein S’mores! They taste just like classic s’mores, but in ice cream form   yum! I added peanut butter to make them even better. Plus, they are gluten-free, dairy-free, and vegan, so everyone can enjoy them. These frozen treats are perfect to keep in your freezer for when you want a sweet snack that’s also packed with protein.

Method

Preparing the Base Layer

To start, line your 8×8 inch baking dish with parchment paper. If you have clips, use them to hold the paper firmly in place so it doesn’t shift while you work. Next, carefully arrange one full layer of gluten-free graham crackers evenly on the bottom of the dish. This layer will be the crispy foundation of your frozen protein s’mores, so try to cover the entire surface without gaps.

Melting the Chocolate

Now it’s time to melt the chocolate. Place the chocolate chips and coconut oil together in a microwave-safe bowl. Heat the mixture in the microwave in 30-second intervals, stirring well after each session. This helps the chocolate melt evenly without burning. Repeat this two to three times, or until the chocolate and coconut oil blend into a smooth, glossy liquid. Once melted, pour half of this luscious chocolate mixture evenly over the graham cracker base, using a spatula to spread it gently so every cracker gets a nice chocolate coating. Then, place the dish in the freezer for about 10 minutes to let the chocolate layer firm up.

Mixing the Protein Whip

While the chocolate sets, grab a bowl and combine the thawed coco whip with your choice of protein powder vanilla or chocolate both work well. Stir or whisk these ingredients together until the mixture is smooth and creamy, with no lumps. This protein whip adds a fluffy, cool layer that gives the s’mores their signature ice-cream-like texture.

Layering the Whip and Peanut Butter

After the chocolate has firmed up in the freezer, take the dish out and carefully spread the creamy protein whip over the chilled chocolate layer, spreading it evenly with a spatula. Then, take your natural peanut butter and gently spread it on top of the whip layer, making sure it covers the entire surface in a smooth, even layer. The peanut butter adds a rich, nutty flavor and creamy texture that takes these s’mores to the next level.

Adding More Chocolate and Topping with Crackers

Next, pour the remaining melted chocolate over the peanut butter layer. Spread it out evenly again so the entire peanut butter layer is covered with a glossy chocolate coat. Finally, add another full layer of gluten-free graham crackers on top of this chocolate layer. Gently press down on the crackers to help everything stick together, but be careful not to crush the layers beneath.

Freezing and Serving

Place the whole dish back into the freezer for at least one hour to allow all the layers to fully set and firm up. When you’re ready to enjoy, take the dish out and, if you like, sprinkle some flaky salt on top for a little extra flavor contrast. Use a sharp knife to cut into squares, and serve immediately for a cold, creamy treat that tastes just like s’mores but with a healthy protein boost!

Ingredients

  • 1 container thawed coco whip (dairy-free whipped topping)

  • 1–2 scoops vanilla or chocolate protein powder (I used my favorite brand)

  • 1 cup chocolate chips (dairy-free if needed)

  • 1 tsp coconut oil

  • 1/3 cup natural peanut butter

  • About 28 gluten-free graham crackers (brand size varies)

  • Flaky salt (optional, for a little extra flavor)

Directions

  • First, line your 8×8 baking dish with parchment paper and use clips to keep it in place if you want. Then, place one layer of graham crackers at the bottom of the dish. Next, melt the chocolate chips and coconut oil together in the microwave by heating for 2 to 3 times in 30-second bursts, stirring each time until the mixture is smooth and shiny. Pour half of the melted chocolate evenly over the graham cracker layer. Put the dish in the freezer for about 10 minutes so the chocolate can set.
  • While the chocolate is chilling, mix the thawed coco whip and your protein powder together in a bowl until it’s smooth and creamy. Take the dish out of the freezer and spread the protein whip mixture evenly on top of the chocolate layer. After that, carefully spread the peanut butter on top in an even layer.
  • Now, pour the remaining melted chocolate over the peanut butter and spread it out evenly again. Then, add another layer of graham crackers on top and gently press them down so everything sticks together nicely. Pop the dish back into the freezer for at least one hour so it can fully set.
  • When you’re ready to enjoy, sprinkle some flaky salt on top if you like a little salty crunch. Cut into squares and dig in!

Notes

  • Make sure the chocolate and coconut oil are fully melted and smooth before pouring this helps it spread easily.
  • Don’t forget to freeze the layers properly so the s’mores hold together when you cut them.
  • Use parchment paper to make it easy to lift the whole batch out and cut neatly.
  • Be gentle when adding the top graham cracker layer so you don’t crush the layers below.

Serving Suggestions

  • Serve straight from the freezer for a cold and creamy treat.
  • Pair with a cold glass of almond milk or your favorite plant milk.
  • Great for after workouts or whenever you want a sweet snack with protein.
  • Pack in lunchboxes for a fun surprise dessert.

Fun Fact

Did you know that peanut butter not only adds yummy flavor but also healthy fats and protein? It makes these s’mores taste even richer and helps keep you full longer!

Conclusion

These Frozen Protein S’mores are my favorite cool treat when I want something sweet but still healthy and filling. They are easy to make, taste like classic s’mores but better, and are perfect for anyone who wants a gluten-free, dairy-free, vegan dessert packed with protein.
