These are crispy, savory, and SO much fun to eat. Perfect for dinner, parties, or just when you want to impress yourself with something cool and delicious.

Method

Make the Salmon

Start by turning your broiler on high to get it ready while you prep the salmon. Take your salmon fillets, remove the skin if needed, and cube them into bite-sized pieces. In a large mixing bowl, combine the cubed salmon with soy sauce (or coconut aminos), kewpie mayo, rice vinegar, avocado oil, and sriracha. Mix everything really well so that every piece of salmon gets coated with the flavorful marinade. Once mixed, transfer the salmon to a baking sheet and spread it out in an even layer so it broils evenly. Place it under the broiler for 8 to 9 minutes, or until the top is nicely browned and caramelized. Keep a close eye on it broilers work fast! Once it’s done, remove the tray from the oven and let the salmon cool slightly while you move on to the next step.

Make the Cucumber Salad

While the salmon cools, grab your cucumbers and green onions. Give the cucumbers a good wash and chop them into small bite-sized pieces. Slice the green onions finely, then toss both into a bowl. Add the rice vinegar and stir everything together until coated. This little salad is super refreshing and brings a nice crunch and brightness to your salmon boats.

Fry the Rice Paper Boats

This part is really fun, but timing is everything. First, take your rice paper wraps and cut each one into four equal quarters. You’ll be using two quarters per boat to make them nice and sturdy. Heat the avocado oil in a large skillet over high heat this will take around five minutes. It’s really important to get the oil very hot. You’ll know it’s ready when you drop in a piece of rice paper and it instantly puffs up into a crisp shell. Once the oil is hot, stack two rice paper quarters together and gently drop them into the oil. As soon as they puff up, use tongs or chopsticks to pull them out right away. It happens fast just a few seconds per piece! Place the crispy boats on a paper towel-lined tray to drain off any extra oil, and repeat the process until you have enough boats ready to fill.

Assemble the Boats

Now for the best part putting everything together! Take your crispy rice paper boats and start filling each one with a generous spoonful of baked salmon. Then add a little scoop of the cucumber salad on top. If you’re using ponzu sauce, go ahead and drizzle a bit over each boat for extra zing. Finally, sprinkle some black sesame seeds over the top if you like a little garnish. That’s it! Your crunchy, savory, fresh little boats are ready to be devoured.

Ingredients

  • For the Salmon:

  • 1 ½ lbs salmon (skin off, cubed)

  • 3 tablespoons soy sauce or coconut aminos

  • 3 tablespoons kewpie mayo

  • 2 tablespoons rice vinegar

  • 1 tablespoon avocado oil

  • 1 tablespoon sriracha

  • For the Cucumber Salad:

  • 3 Persian cucumbers, chopped

  • 3 green onions, chopped

  • 2 teaspoons rice vinegar

  • For the Crunchy Boats:

  • 12 rice paper wraps, quartered

  • 1 cup avocado oil (for frying)

  • ¼ cup ponzu sauce (optional)

  • Black sesame seeds for garnish (optional)

Directions

  • Turn on your broiler to high. In a bowl, mix the cubed salmon with soy sauce, mayo, rice vinegar, avocado oil, and sriracha. Stir well to coat. Spread the salmon evenly on a baking sheet and broil for 8–9 minutes until the top is golden and caramelized. Set it aside to cool slightly.
  • Chop the cucumbers and green onions. Toss them in a small bowl with rice vinegar. That’s it fresh and tangy!
  • Cut each rice paper wrap into 4 pieces. Heat avocado oil in a large skillet over high heat. Wait at least 5 minutes the oil needs to be super hot. Test it by dropping one rice paper quarter in. If it instantly puffs and crisps, you’re good to go!
  • Once your boats have cooled, fill each one with a scoop of baked salmon and a spoonful of cucumber salad. Add a drizzle of ponzu sauce if you like. Sprinkle sesame seeds on top for extra flair!

Notes

  • Don’t rush the oil heating step. If it’s not hot enough, the rice paper won’t puff and will turn chewy instead.
  • Be careful not to overload the salmon on the boats. They’re sturdy but still delicate.
  • Broil the salmon close to the heat but watch it carefully so it doesn’t burn.

Serving Suggestions

  • Serve these as a fun appetizer or main dish.
  • Make a “build your own boat” bar for guests.
  • Add avocado slices, pickled ginger, or spicy mayo on top.
  • Pair with miso soup or seaweed salad for a full meal.

Fun Fact

Did you know rice paper puffs up like magic when it hits hot oil? It’s kind of like a little science experiment in your kitchen fun to watch and even better to eat!

Conclusion

These baked salmon crunchy rice paper boats are crispy, flavorful, and just plain fun. They’re simple enough to make on a weeknight but special enough to wow your friends. Try them once, and you’ll want to make them again and again. Hope you enjoy every crunchy bite!
