Cajun Salmon Bites: Spicy, Crispy & Air-Fried to Perfection!

These Cajun Salmon Bites are one of my favorite quick meals when I’m craving something crunchy, spicy, and a little fancy but still super easy! The salmon gets coated in a bold Cajun seasoning blend, dredged in panko crumbs, and air-fried until golden and crispy. Best part? You don’t need a deep fryer just your trusty air fryer!

I love serving these with a swirl of sriracha mayo and a fresh squeeze of lemon. Whether you’re making a fun weeknight dinner or prepping snacks for a get-together, these salmon bites are always a hit.

Method

Seasoning the Salmon

First, begin by cutting your salmon fillets into bite-sized chunks, making sure the skin is removed. Place the pieces into a mixing bowl, then add the Cajun seasoning, paprika, and garlic granules. Gently mix everything together using a spoon or your hands just be careful not to mash or break the salmon. You want each piece to stay intact while getting evenly coated with that spicy, flavorful mix.

Setting Up the Dredging Station

Next, set up your dredging station using three shallow bowls or plates. In the first bowl, add plain flour. In the second, crack in two large eggs and beat them well. In the third, pour in the panko breadcrumbs. Now, working one piece (or a few) at a time, coat each salmon chunk in flour, making sure all sides are covered. Shake off any extra flour, then dip the floured piece into the beaten egg, letting the excess drip off. Finally, toss the salmon in the panko breadcrumbs, pressing slightly so the coating sticks well.

Air Frying the Salmon

Now it’s time to crisp things up! Lightly spray your air fryer basket or tray with a little oil to prevent sticking. Place the coated salmon bites in a single layer in the basket don’t overcrowd them or they won’t crisp up properly. Set your air fryer to 200°C (390°F) and cook for 8 to 10 minutes, flipping the bites halfway through to get even browning. You’ll know they’re ready when they’re golden, crunchy, and sizzling just a little on the outside.

Finishing Touches

Once cooked, carefully transfer the salmon bites to a serving plate. Garnish with freshly chopped parsley and a generous squeeze of lemon to brighten the flavors. For the ultimate dip, serve with sriracha mayonnaise on the side it adds a creamy, spicy kick that pairs perfectly with the crispy coating.

Ingredients

  • 4 salmon fillets (skin removed, cut into bite-size pieces)

  • 2 tsp Cajun seasoning

  • 1 tsp paprika

  • 1/2 tsp garlic granules

  • For Dredging:

  • Plain flour (about 1/2 cup)

  • 2 large eggs, beaten

  • 2 cups panko breadcrumbs

  • For Garnish:

  • Lemon wedges

  • Fresh parsley

  • Sriracha mayonnaise (store-bought or homemade)

Directions

  • In a bowl, toss your salmon pieces with Cajun seasoning, paprika, and garlic granules. Mix gently so the fish doesn’t break apart.
  • Set up your dredging station flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Take a piece of salmon, coat in flour, dip in egg, then press into panko. Repeat with a few at a time.
  • Spray your air fryer basket lightly with oil. Place the salmon bites in a single layer don’t crowd them! Set the air fryer to 200°C (390°F) and cook for 8–10 minutes, flipping halfway.
  • Once crispy and golden, transfer to a plate. Garnish with chopped parsley and a squeeze of lemon. Serve hot with a big dollop of sriracha mayo on the side!

Notes

  • Be gentle when mixing the salmon with spices to avoid breaking the chunks.
  • Don’t skip the flour, it helps the egg stick properly.
  • If your air fryer tray is small, cook in batches. Overcrowding can lead to soggy bites instead of crispy ones.
  • Keep an eye during the last 2 minutes of cooking. Air fryers vary, and salmon can overcook quickly.
