This Chicken Tikka Crispy Rice Salad is one of my favorite creations bringing the flavors of Indian cuisine with a fresh and crispy twist! While it’s not traditional Indian food, the vibrant spices and minty yogurt dressing certainly give off those Indian vibes. Packed with protein, crispy rice, and plenty of colorful veggies, this salad is a winner for a light lunch or a healthy dinner. If you love big, hearty salads like I do, this one will surely be added to your list of go-to meals. Trust me, it’s delicious!
Method
Chicken tikka crispy rice salad start by preparing the crispy rice. Preheat your oven to 400°F and line a baking sheet with parchment paper. Take the cooled basmati rice and spread it evenly on the prepared baking sheet. Drizzle with olive oil and toss it with the garam masala, cumin, and turmeric until well-coated. Bake the rice for 25-30 minutes, tossing halfway through the cooking time to ensure it crisps evenly. Be sure to keep an eye on it to avoid burning, as the rice can crisp up quickly.
While the rice is baking, move on to cooking the chicken. In a bowl, combine the boneless, skinless chicken thigh pieces with olive oil, lime juice, garlic powder, ginger, dried coriander, garam masala, turmeric, cumin, and kosher salt. Mix well to coat the chicken evenly with the spices. Heat a large skillet over medium heat and once hot, add the seasoned chicken. Cook the chicken for about 7-10 minutes, stirring occasionally, until fully cooked through and golden brown. Once the chicken is cooked, remove it from the heat and set it aside.
Next, while the rice and chicken are cooking, prepare the salad. Chop up the romaine lettuce, cucumbers, red onion, and green bell pepper into bite-sized pieces. Slice the baby tomatoes in half and add all the chopped ingredients into a large mixing bowl. Then, add the chickpeas to the bowl for some extra protein.
Once your rice and chicken are done, it’s time to make the yogurt mint dressing. In a blender or food processor, combine the Greek yogurt, olive oil, mint leaves, cilantro leaves, garlic, lime juice, salt, and jalapeno (if you like a little heat). Blend until the dressing is smooth and creamy. Taste the dressing and adjust the seasonings as needed to your liking whether it’s more salt, lime juice, or even more mint for that refreshing kick. Finally, assemble the salad. Add the crispy rice and cooked chicken to the salad ingredients in the large bowl. Pour the creamy yogurt mint dressing over everything, and toss gently to combine all the ingredients. Make sure everything is well-coated with the dressing.

For the Salad:
4 cups romaine lettuce, chopped (~2 heads)
2 Persian cucumbers, chopped
1/4 red onion, sliced
1/2 cup chickpeas
1/2 cup baby tomatoes, halved
1 green bell pepper, chopped
Directions
- Prepare the Crispy Rice: Preheat your oven to 400°F. Line a baking sheet with parchment paper. Spread the cooled rice on the baking sheet and toss it with olive oil, garam masala, cumin, and turmeric. Bake the rice for 25-30 minutes, tossing halfway through to ensure even crisping. Watch closely so it doesn’t burn.
- Cook the Chicken: While the rice is baking, season the chicken pieces with olive oil, lime juice, garlic powder, ginger, coriander, garam masala, turmeric, cumin, and salt. Heat a large skillet over medium heat, and once it’s hot, add the chicken. Cook the chicken pieces for about 7-10 minutes, or until fully cooked. Once done, remove from heat and set aside.
- Make the Salad: While the rice and chicken are cooking, chop all the salad ingredients. Add the romaine, cucumbers, red onion, chickpeas, tomatoes, and green bell pepper to a large mixing bowl.
- Make the Yogurt Mint Dressing: Blend together the Greek yogurt, olive oil, mint leaves, cilantro leaves, garlic, lime juice, salt, and jalapeno (if using) in a blender or food processor. Blend until smooth and creamy. Taste and adjust the seasonings to your liking.
- Assemble the Salad: Once the rice is crispy and the chicken is cooked, add them to the bowl with the salad ingredients. Pour the yogurt mint dressing over everything and toss gently to combine.
Notes
- When baking the rice, be sure to toss it halfway through the cooking time to ensure it gets crispy and doesn’t burn.
- While cooking the chicken, make sure the pieces are evenly cooked, and avoid overcrowding the pan to ensure they brown nicely.
- If you’re not a fan of spicy foods, you can leave out the jalapeno from the yogurt mint dressing without losing too much flavor.

Serving Suggestions
- Side Dish: Serve this salad with some warm naan bread or pita on the side for an extra dose of flavor.
- Add Extra Protein: If you want even more protein, you can add boiled eggs or extra chickpeas on top of the salad.
- Spicy Kick: For more heat, add extra jalapenos or chili flakes to the dressing.
